Exchange 5.5 upgrade

We are planning a Exchange 5.5 upgrade to new hardware. We like to use Win 2003 Server and Exchnage 2003 when it comes out. What is the easiest way to move the data to the new server? I guess if you do not know about 2003 use the Windows 2000 method. Any help would be great.
