Exchange Server Open relay documentation

Hi,
I am currently writting a document for support and training reasons and I need to get some documentation (mainly screen shots) on how to do this – I have the written part done its just getting the screen shots from somewhere, I don’t use exchange but we do support some aspects of it other wise I would have no probs…. I have search many sites without success. Please can anyone help on this matter
