FROM: line – change what shows

I know this must be a simple answer but I cannot find the answer. This is in Microsoft Small Business Server 2003, Exchange. I’m using POP3 connector and sending through my ISP’s SMTP server.
How do I change what shows in the FROM: field when an e-mail is sent by a particular user? This is for external e-mail.
