instances of files in diff windows

I have noticed in office 2000 that each time you open one file within eg Excel, it opens a separate instance of the program.

Eg in Excel with a blank workbook, open another Excel spreadsheet and it shows another instance of Excel on the taskbar. This applies to Word etc etc too.

Can you tell me how to change this so that it opens in the same program instance ?
