Recovery Exc 5.5 on a different server

Hello,
I’m a newbie of this field. My issue is: we have an exchange server 5.5, and we perform daily a full backup with Veritas.
I need to restore data to a different server, in order to recovery some old e-mail.
Which is the right procedure in order to reach the result?
