remote mail

I have a user who needs to know 1. when he VPN’d to the network to open his email it sucked all his mail from the server. 2. what is the correct way to use you out look at home to get your mail when you VPN to your mail in outlook 2000. Is there a how to on getting your mail at home and not move it off the server?
