Removing an Exchange 2000 server

I have 2 Exchange 2000 servers and I want to remove one of them. There are no connectors other than the SMTP connection for internet email. The one I want to remove was the original and only email server and it was upgraded from 5.5.

Is there a technet document mapping this out?

What stpes should I follow to accomplish this?
