Updates or no updates??

There is a big debate right now in my department.
We are migrating to Win2000 and Office 2000 or XP but nobody seems to be able to makeup there minds…Office updates or not?
Some says it’s better without them some says put them all without the outlook security ones.
I myself getting confused!
Any suggestions?
