VHS Video Conversion to CD/DVD

I have a large collection of VHS ‘home videos’. I want to:

a) convert them to either CD or DVD – what is recomended.

b) After converting re-edit / mix them – what is recomended.

c) Got a couple of good web sites to learn more?
