What version of MS Office should I buy

I am looking at updating Microsoft Office for my organization. The question came up about why don’t we just buy the standard edition since noone really uses Access anyway. My question is what is the difference between Office Standard and Professional? How much pain can I expect down the road in cost if we have to abandon the Standard edition for Professional or Enterprise edition of Office?
