Windows 2000 Task Bar

In Windows 2k Pro is there a way to configure the taskbar to display one button or instance when a program is opened but multiple documents of that program are also opened? I would rather navigate through each opened document through the program compared to the buttons on the taskbar. For example I use Microsoft Excel and have multiple Excel documents or spreadsheets open at once and the taskbar gets kind of full, I would much rather have the Excel program button display on the taskbar.
