About DNS and DHCP

I created a some zones in my DNS in w2k adv. server.And i want when my clients give request to access zones they will different IP through DHCP server.How i do it.Second on a single NIC card how many fake IP’s i can assigned wht is the limit of it.Third is there any software for networking which shows u what ur clients are doing.If someone opens some web site then that information comes to server that this client opens this web site or he is doing this work.So that i know wht my clients are doing.
