Create a user profile-Logon Script- W2K

I am trying to create a logon script for users logging on local. Several hundred PC’s will be imaged the same and not entered as a domain.
How do I set up the Profile path and Logon script under user profiles?
I am wanting to remove the; run, settings, etc… from users access. I can remove them through mmc but it also affect the admistrators menu.
