DNS Root server

If a windoes 2000 DNS server was origninally configured to be a root server, how do I undo that without formating and starting over. I need to be able to use forwarders and root hints. I tried uninstalling DNS and reinstalling, but it seems to remember my settings. Even if I reboot between removal and reinstall.
