Dual Channel Memory

I have a question reguarding dual channel memory. Is it possible to run DDR memory that has matched timings at dual channel, instead of buying a dual channel memory kit? These kits seem like a gimmic to me to make more money. Also will components be damaged if non dual channel memory is used or will the memory just work in single channel configuration? Thanks for the help.
