Fault Tolerance

My two options for fault tolerance currently are mirroring or disk striping with parity. The quickest solution for us right now is mirroring, just to get something into place. But I need to know what is the best way to go about implementing RAID 5 on my servers when the time and money are available…I’ve a newbie to this, so I’d need to know the details (i.e. platform, requirements, best way to back up and restore info on the new stripe set, speed/cost comparisons, etc.).
