How to show all user/groups in add security/permission tab

In server 2003; when you create a new folder or share and want to add user/groups in the “select Users, Computers or Groups” box via permissions/security tab:

How do you get it to show all without knowing and having to type in the object.

Like in server NT/2000 you could see the list of all users / groups / etc!

I’m sure this is some form of new security feature in 2003 but there must be an easier way for admins.
