Logon Scripts / Profiles

I have a 5pc network. We were using peer to peer networking but have decided to start using a server. Firstly: I need to have all my users files running off of the server. So “My Documents” and “Desktop” will be located on the server. Secondly: I need to restrict access to everything, control panel, display properties, etc.

So, should I use logon scripts or profiles or something like that, and if so how?
