Making Tutorials

We run a small teaching class in a rather a large organisation.
We badly need some small tutorials for beginners: probably AVI files that everyone could launch.
What software you would recommend to make those (like the ones they use in MS Office Help, showing where to move the cursor, how to highlight items and thigs like that)?
