Monitor activity of the TCP/IP printer

In my windows 2000 network, I have 2 Hp laserjet 4100N network printers. How can I monitor the activity of the printer. I mean I want to log who printed which document or file and when, how can I do that for each printer separately, and read the logs in an easy way.
