My Documents Dilemma

I have an NT and 2000 newtork. DC is 2000. I do not want Roaming User Profiles and do not need them. However, I do need a solution for easily backing up the MY DOCUMENTS folder on 2000. I also want MY DOCS to be available if the network goes down…so I need to keep a local copy of MY DOCS on the pc. I have changed the path to MY DOCS to a server share\username…but how can I keep a local copy on the PC. What is the easiest method? Good practice? Any ideas? And please keep in mind that I value bandwidth…so I would like to keep users from working directly off the server. Any help appreciated! Thanks! What are my options?
