New Hard Drive

I need to transfer some – not all – data from an old hard drive to a new one. I have the software CD’s so that I can reinstall. Just wondering best way to transfer Outlook Express files, documents, music, isp settings, etc. Do I have to connect the 2 computers or can I just copy info to CD’s and transfer to new computer via CD?
