Partition!!

I am reprogramming a Compaq Proliant 1600 Sever which was done by a tech b4 me….my problem is that i want to repartition the HDDs as the person bb4 me has made a really mess………..i was wondering if there is a way that i can re partition it without formatting the sever………man am i confused!!!!!!
