RAID Controller Channel Question

To put two RAID arrays on one server, do I need a controller card with two channels? I have found documentation that says you can split an array between two channels, but can you split a channel between two arrays? Does the controller card keep the channels seperate? I want to have a RAID 5 array for data storage (3-4 hdd), and a RAID 1 array for my OS hdd. Would a dual-channel controller card (spec. Adaptec 2200S) allow me to do this?
