Single Server Exchange Restore

Greetings.

I’m working on creating a network for a company, I just want to make sure that the restore will work for a Windows 2000AS/Exchange 2000 server. A complete restore from image works, but is there a way to restore mailboxes in a single server environment? Any help would be appreciated.
