Voice Capture Devices

Propsective client conducts surveys. Wants to be able to capture fragments of conversations with interviewees. Requirement is trigger recording with depression of some key (such as F2) and terminate with another or same key. Conversation is then captured with VB and assimilated into Access. I have no idea where to find such a device. Can you advise?
