Which Linux works best on old phone or tablet?

Hey everyone 👋
I have an old Android phone (Samsung Galaxy S7) that I’d like to repurpose. I’m wondering which lightweight Linux distro or mobile OS would run best on older hardware like this?
I’ve heard about PostmarketOS and Ubuntu Touch, but not sure which one is more stable or easier to install.
Any suggestions or experiences would be really helpful. Thanks!
