Win2000, Raid 0 and Partitions

This is a rather simple question, but I can’t find a quick answer so …
I am looking at purchasing a mainbard with raid 0, and 0+1 on board. What I want to do is to have two 80 gig hard drives set to raid 0 to take advantage of the speed increase,my problem is I don’t know/remember if I can then partition the combined drives so I don’t end up a fast 160 gig single partition. Can I do this ?
