Are Deleted Msgs Retrievable in Exchange

We have our Exchange 2000 Server set up to hold deleted messages for 7 days. My question is, does Exchange do a physical delete at that time make it impossible to retrieve the messages or is there a way to “find” deleted messages? Is there a tool out there to do this? I need to locate some non-business related e-mails within my organizations e-mail server, and by doing a brute force scan of the data store (12 Gig) I have found message fragments from the deleted messages. Is there a layout on how to read the data store?
