Automatic backup a hard disks?

I have two IDE 13.3GB Hard drives(C/D) and one USB Hard drive SCSI Buslink 13GB (E).
I would like to set up an automatic backup of all data on C & D and some program files, to go to E. My questions are:
1. Which software to use?(Ghost,Autosave,etc)
2. What exceptions shall I use?(temp,scn,etc)
3. How to set up the restore?
