Blocking Emails from Certain Senders

We would like to block certain addresses from sending any email to our server. However we don’t want to block the whole domains where that mail originates from. I am new to administering with NT and would appreciate any help in this matter.

Our configuration is NT 4.0 with service pack 4 installed running Exchange Server 5.5
