Convert itunes library to mp3

I recently purchased a 64 GB Cruzer Fit by SanDisk and I would like to convert the entire library to mp3; so I can play it in my car. I would like to keep the folder/ album/ song format too. Possible? As I understand it iTune’s does this internally, but I cannot understand how.
