Exchange 2007 to Exchange 365

Dear All,

Not often I post on here but could do with a definitive answer.

We’ve made the brave decision to migrate our users to O365 and our Exchange Server (2007) to Exchange 365. My question is this;

Before I begin migrating mailboxes, HOW do I ‘repoint’ the users Outlook clients (profiles) to look at the new exchange server as opposed to the old one?

As always, lots of conflicting information in the wild and i don’t know enough to be able to differ fact from fiction. Some say to use DNS records etc. which would make sense although others say the previous exchange server will redirect users once the mailbox has been migrated? Does this mean i would need to leave it ‘live’ until all had fully migrated?

Any help much appreciated.
