Hyperscaler vs. Sovereign Cloud Pricing Advantages

When comparing the pricing models for Hyperscalers and EU Sovereign Cloud Providers, the lower egress costs and a simpler, flat-pricing stand out as reasons where EU sovereign cloud providers are preferrable. What are some use cases that do not take advantage of these pricing advantages and would be more cost-effective to deploy on hyperscaler clouds?

For example, I imagine serverless computing would be more cost-effective on hyperscaler cloud, due to the larger feature-breadth and more flexible, elastic pricing. Am I right in thinking this? What are some other use cases where hyperscaler pricing models are preferred?
