Need help programming MICROS 2700

I am helping out with a restaurant changing hands. They have the user guide but NOT the System Programming Manual.
I need to set up food temps, new screens etc….but I have no idea how to do it without the manual to walk me through it.
So I either need someone REALLY experienced with it, or someplace to buy the manual.
I’ve been looking online and can’t find any place that sells it.
