Outlook Calendar: Can I create a colour-coded template in outlook?

Currently I am on Outlook 2010, and was looking to create a template within the outlook calendar that would allow me to block set periods of time for specific appts, through colour coordination.

Would it be possible to create a phantom calendar for Drs who don’t really use outlook?
