Outlook Email Analysis

I have a problem that requires me to analyze emails received in a helpdesk mailbox by date and time. I need to chart the date and time received to create a frequency plot. Unfortunately Outlook 2003 doesn’t make it easy to export the data to do this type of analysis. Has anyone come across a way to do this?
