Sorting the Outlook Contacts folder

I have a client that has, in his mind, a productivity issue. While his Contacts folder is sorted by last name first as he likes it, when he starts a new email and clicks on the “To:” button to enter recipients, the menu is not sorted that way. Is there an option to sync up the chosen sort in contacts and the display in the “To:” field?
