Win2K with 64MB RAM?

I am planning to upgrade several workstations from Win95 to Win2K Pro next year. Does Win2K run at acceptable levels with only 64MB RAM? I know more RAM is better, but is it necessary? The systems use Word/Excel/Outlook 2000, virus scan, and IE5.5. Any advice is welcome.
