Accessing MSOutlook .pst, contacts, etc from another account

Running Windows XP Media Center Ver 2004, I have been using the default admin account exclusively on my PC for a couple of years now. As such, all my email accounts, data files, music, videos, photos, etc are stored under that account. I recently decided to create an account for my kids, but the system would not allow this, unless I created an admininstrator account, which I did. I then created the account for my kids.

Well as it turns out, now that I have this new admin account, I can’t get back into the default administrators personal folders, contacts, etc. (actually the entire account, files, etc are no longer avaialble, except by booting into safe mode!)

I restored the system to before I had the new accounts, because I needed my files more than the kids need access to my system, but is there something I can do to make the outlook files available to another user, so that I can create the new accounts?
