Decommissioning an old SQL Server 2005 server which hosts the EPM databases

We need to decommission the server which hosts the Project Server 2007 and Sharepoint databases. We want to move the databases to a new SQL server 2005. Is there any step-step guide to do this?

Will a full Farm backup and restore do the trick?

The new SQL server has a diffrent host name.
