Delete / Re-create mailboxes in Exchange

I know I have done this before, but I am drawing a blank right now. In Exchange 2003, I have a users mailbox that I want to delete, but I want to Re-create a new mailbox for the same user. I thought I did this in AD, but when I do, it does not display in System Manager – Mailboxes. Any ideas on how I can create a new, empty mailbox for an existing user?
