Host Hardening

I am working on a job for a very large industrial client. The client has widespread servers and clients at multiple sites running all sorts of operating systems. We are required to harden the servers and clients by disabling ports and services and removing unnecessary programs. I am actually an I&C engineer who feels this task is better suited for an IT or IS discipline; but it’s my job.

So, I need a listing of all the possible ports and services for each type of installation. Can anyone help me here?
