Hosting domains email on wan Exch. 5.5

We have 4-5 other companies (grocerie Stores, we are a food Dist.) we host their email. Have been doing it with Domino. Now switching to Exchange 5.5. They are on our WAN so we don’t need RAS. Wondering if anyone knows a good article or has somepointers for the setup???
