IT Consultant: self employed?

Guys, I started doing some consulting on my own, but my experience has always been working for some company as Sys Admin, and I would like to hear some advise or suggestions you might have, specially regarding, if it is necessary to make your clients sign contracts, and how to document your work, invoices, etc..
