Lost fields in inbox and sent items, only have arranged by & newest on top

I am running Outlook 2003 and at one stage had a tool bar under the inbox and sent items heading that had from, received etc on it, and you could right click and add other fields from the field chooser. Now I have a toolbar that has Arranged By, which you can right click and choose another field, but you only see that field. Can someone please help me get the other one back???
