PST Files

I have a problem with the PST files on my server. These files are growing and growing and we are running out of space… I tried to find a program that can put quotas on these files, but if I put a quota on a PST file, i can open Outlook and if I can’t open outlook I can’t delete nothing. Do you know any solution to this?
