Ways to Organize – Using Colors (Outlook 03)

Hello Tech community,
I’m trying to help a co-woker solve an MS Outlook 2003 problem. She is trying to organize her inbox by using colors to color code messages by sender. The problem is, when she applies the color to a “John Doe”, Outlook is applying the color to all of the “John’s” she receives emails from.

It seems like there is some “wildcard” working behind the scenes or a ghost that it picks up items based upon the first “word” rather than the email or exchange address. Does anyone have any insight to why this is happening?
