Accessing another users email

I am the administrator of our companies Exchange server. I have been asked by management to look at another users email (specifically the sent items) due to possible infractions of policy. How would I do this? Can it be done in the server environment or do I need to go to that persons desktop? I know how to access the inbox for current emails.
