Building a test lab

We are looking at building a testing lab to give folks practice with security issues, Nessus, Nmap, anti-virus etc. We have some old desktop machines (Linux, XP, 2000) and some decent servers with Windows 20003, router and firewall. I am looking for advice or suggestions on what should go into this lab and configurations. Directions to other resources appreciated. Thanks.
